An evening of wine and chocolate

The annual Wine Tasting Party will feature five wine and chocolate pairings. Annie, the chocolatier of Cacao and Cardamon, will produce unique chocolate confections. Complementary lite bites prepared by Chef Sorensen will also be served.

Here are the wine and chocolate pairings, and associated lite bites: 

Becker Vineyards Claret with Szechuan Peppercorn chocolate (spicy - salty); Slow Roasted Pork Belly on Acorn Squash Pancake and Smoked Shallot -- Wild Chive Pesto 

Lustau Sherry with Chipotle chocolate (Smoky - Spicy); Brown Sugar Cured Filet Mignon on Sweet Potato Tart and Cherry Chutney

Forrest Botrytised Reisling with Guava Tamarind chocolate (fruity - tangy - sweet); Grilled Avocado and Blue Crab Salad on Sea Salt Cracker with Thai Basil

Nora Albarino with chocolate Mango Caramel chocolate (tangy - tropical); Dried Chili Marinated Shrimp on Grilled Corn Bread and Fire Roasted Tomato Aioli

Torrontes with Chamomile Vanilla chocolate (sweet - fragrant); Apple Cider Brined Duck on Black Rice Cake and Roasted Apricot

Annie the chocolatier is trying through Cacao and Cardamon to revive the rich culture surrounding cacao and chocolate. She writes, "Chocolate has captivated my world and inspired me to use my experiences, travels, and culinary insight, to create unique handmade confections. I hope that by savoring our chocolate you are reminded to live in the moment and be more mindful of your present experience, delving to wherever the spices and chocolates may take you."
